SMYRNA — Located on the corner of Roswell Street and Hawthorne Avenue, newly-opened Ruby’s Sourdough Pizza is looking to foster a sense of community through its food and dining space.
Along with serving freshly-made sourdough pies, owner Chris Rimby said the goal is to build a community space for families and friends.
“This whole place was designed with the intention to host,” he said. “Being able to create an experience for someone to spend time with their friends (and) family, at the end of the day, that’s all that really matters.”
The pizzeria’s campus contains an outdoor patio, a greenspace area with lawn chairs and a kiosk with a large flat screen TV and a stage. Rimby said the restaurant will regularly use the space to host special events and football watch parties.
Ruby’s aforementioned sourdough is handmade every morning by staff members, Rimby said, and customers can order their pizzas in full or by the slice.
The pizza menu is divided into two separate categories: red pies and white pies. Red pies have crushed tomato sauce and traditional pizza toppings while all white pies are based with the restaurant’s house crème fraîche sauce.
Rimby compares the sauce to a less sour, sour cream.
On the red pies list, one of the more popular dishes is “The Roundabout,” Ruby’s take on a supreme pizza. The dish is topped with crushed tomato sauce, mozzarella, meatball, sausage, pepperoni, cremini mushroom, sweet pepper, cherry tomatoes and red onion.
On the white pies list, Rimby said the mushroom white pizza has proven to be the most popular among customers. The pie comes with mozzarella, cremini mushrooms and roasted onion as its signature toppings.
Rimby’s personal favorite is the Mexican white pizza, topped with mozzarella, Mexican chorizo and red onion.
Ruby’s drink menu features six different tap beers and a variety of other canned cocktails.
Smyrna resident Therann Schwartz brought his friend Primous Howard to grab lunch at the restaurant Friday where they both ordered slices of the Meaty Boi, Ruby’s meat-lovers pizza topped with meatball, sausage and pepperoni. Both live down the street and said they were excited to see a new restaurant in their neighborhood.
“I took one bite and I (thought), ‘Oh, this is a really good pizza,’” Howard said. “They’ve got great food, really good beer. It seems like it’s very family-friendly.”
As a pet-friendly restaurant, guests are also welcome to bring their four-legged friends and enjoy their food on the outdoor patio.
Looking to the future, Rimby said the company is planning to turn the green-space kiosk into a mini coffee and ice cream bar. In the building next door to Ruby’s, Rimby said he has ideas for installing a taco and burrito restaurant.
To celebrate the holiday season, Ruby’s will be throwing a Winter Wonderland Christmas party Dec. 15 which will feature live music, holiday movie screenings and a visit from Santa Claus. At noon, 14-year-old country music artist Rocco Gorelik will be performing for customers on the green-space stage. Santa will then make his grand entrance on a Smyrna fire truck at 2 p.m., followed by screenings of “Home Alone” at 4 p.m. and “Elf” at 6 p.m.
Ruby’s Sourdough Pizza is open Monday through Thursday from 11:30 a.m. to 9 p.m., Friday through Saturday from 11:30 a.m. to 10 p.m. and Sunday from noon to 9 p.m. They are located at 1625 Roswell St SE, in Smyrna.
